Discover the ultimate comfort food with this irresistible Sausage Green Bean Potato Casserole, where smoky sausage meets tender vegetables in a creamy, cheesy embrace.

  • Total Time: 1 hour 5 minutes
  • Yield: 6-8 people 1x

Ingredients

Scale
  • 1 pound smoked sausage, sliced into rounds
  • 1 pound baby potatoes, halved
  • 1 pound green beans, trimmed and cut into 2-inch pieces
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 3/4 cup chicken broth
  • 1/2 cup heavy cream
  • 1 1/2 cups sharp cheddar cheese, shredded
  • 2 tablespoons olive oil
  • 2 tablespoons butter

Instructions

  1. Preheat and Prep: Heat your oven to 375°F (190°C). Grease a 9×13 inch baking dish with butter or cooking spray.
  2. Season the Vegetables: In a large bowl, toss potatoes and green beans with olive oil, paprika, Italian seasoning, salt, and pepper until well coated.
  3. Brown the Sausage: Heat a large skillet over medium-high heat. Add sliced sausage and cook until lightly browned, about 5 minutes. Transfer to a paper towel-lined plate.
  4. Sauté Aromatics: In the same skillet, melt butter. Add onions and garlic, cooking until softened and fragrant, about 3-4 minutes.
  5. Combine and Layer: Mix the sausage, seasoned vegetables, and sautéed onion mixture in your prepared baking dish. Pour chicken broth and heavy cream over everything.
  6. Bake to Perfection: Cover with foil and bake for 35-40 minutes, or until potatoes are tender when pierced with a fork.
  7. Add the Cheese: Remove foil, sprinkle shredded cheese evenly over the top, and return to oven uncovered for 10-15 minutes until cheese is melted and golden.
  8. Serve: Let rest for 5-10 minutes before serving hot.
