Ingredients:
For the Cake:
- 2 cups all-purpose flour
- 2 cups sugar
- 1/2 teaspoon baking soda
- 1 teaspoon salt
- 1 cup butter
- 1 cup water
- 1/4 cup creamy peanut butter
- 2 eggs, beaten
- 1 teaspoon vanilla extract
- 1/2 cup buttermilk
For the Peanut Butter Icing:
- 1/2 cup butter
- 1/4 cup creamy peanut butter
- 1/3 cup plus 1 tablespoon milk
- 1 (16-oz.) pkg. powdered sugar
- 1 teaspoon vanilla extract
Instructions:
In a large bowl, combine the flour, sugar, baking soda, and salt, set aside.
In a saucepan over medium heat, combine the butter, water, and 1/4 cup of creamy peanut butter. Bring the mixture to a boil, stirring until everything is melted and well combined. Remove from heat.
Pour the hot peanut butter mixture into the dry ingredients and mix until the batter is smooth.
In another bowl, combine the beaten eggs, vanilla extract, and buttermilk. Add this mixture to the peanut butter batter and stir until fully incorporated. Grease a 15″x10″ jelly-roll pan and spread the cake batter evenly in it.
Bake the cake in a preheated oven at 350 degrees Fahrenheit (175 degrees Celsius) for 25 to 28 minutes, or until the cake springs back when gently touched.
While the cake is still warm, prepare the Peanut Butter Icing. In a saucepan over medium heat, combine the 1/2 cup of butter, 1/4 cup of creamy peanut butter, and 1/3 cup plus 1 tablespoon of milk. Bring this mixture to a boil.
Remove the saucepan from heat and stir in the powdered sugar and vanilla extract until the icing reaches a spreading consistency. Immediately spread the warm Peanut Butter Icing over the baked cake.
