Easy Corn Fritters

Corn Fritters Recipe:

Ingredients:

  • 1 can whole kernel corn
  • 2 eggs
  • Salt & pepper to taste
  • 1/2 cup flour
  • 1 tsp baking powder
  • 1/2 cup shredded cheese
  • 1 pat butter
  • 2 tbsp oil
  • 1/4 cup chopped parsley

Directions:

Start by draining the can of whole-kernel corn and discard the liquid. In a mixing bowl, crack the eggs and season them with a pinch of salt and pepper. Beat the eggs until well combined.

Add the flour and baking powder to the egg mixture, then whisk until you have a smooth batter. Incorporate the drained corn and shredded cheese into the batter. Stir well to ensure an even distribution of ingredients.

In a frying pan, heat a pat of butter and two tablespoons of oil over medium heat. Wait until the butter becomes bubbly.

Using a spoon, drop spoonfuls of the corn mixture into the frying pan, creating individual fritters. Allow the fritters to cook until they turn golden brown on one side. This should take a few minutes.

Carefully flip the fritters to cook the other side until it’s golden brown and crispy as well.

Once the fritters are cooked to perfection, remove them from the pan and place them on absorbent paper to drain any excess oil. Garnish with freshly chopped parsley for a burst of color and added flavor.
