Cinna-bun Cake: A Cozy Homemade Treat
Sometimes, the comforting aroma of cinnamon and the warm embrace of a freshly baked cake are all you need to feel at home. This Cinna-bun Cake, inspired by the longing for my mom’s homemade cinnamon buns, is my delightful twist on her traditional recipe.
Since I don’t make cinnamon buns myself and with my mom away, I’ve had to get creative. This cake version captures the essence of those beloved cinnamon rolls in a simpler, yet equally indulgent form. Dubbed “Cinabun Cake” by our two-year-old, it’s become a household favorite, perfect for any time you crave a sweet, cinnamon-spiced treat.
Ingredients
For the Base:
- 3 cups flour
- 1/4 teaspoon salt
- 1 cup sugar
- 4 teaspoons baking powder
- 1 1/2 cups milk
- 2 eggs
- 2 teaspoons vanilla extract
- 1/2 cup butter, melted
For the Topping:
- 1 cup butter, softened
- 1 cup brown sugar
- 2 tablespoons flour
- 1 tablespoon cinnamon
For the Glaze:
- 2 cups powdered sugar
- 5 tablespoons milk
- 1 teaspoon vanilla extract
Instructions
- Preheat and Prepare:
- Preheat your oven to 350°F (175°C). Grease a 9-inch by 13-inch baking pan with non-stick cooking spray or butter.
- Mix the Base:
- In a large bowl, combine flour, salt, sugar, and baking powder. Add milk, eggs, and vanilla, mixing until well combined. Finally, stir in the melted butter.
- Pour this mixture into the prepared baking pan. Set aside.
- Prepare the Topping:
- In a small bowl, mix together the softened butter, brown sugar, flour, and cinnamon until well combined.
- Assemble the Cake:
- Drop spoonfuls of the topping over the base. Then, using a butter knife, gently swirl the topping into the base to create a marbled effect.
- Bake:
- Place the pan in the preheated oven and bake for 28-30 minutes, or until the cake is set and a toothpick inserted into the center comes out clean.
- Glaze the Cake:
- While the cake is baking, prepare the glaze by mixing powdered sugar, milk, and vanilla in a small bowl until smooth.
- Once the cake is done, remove it from the oven and immediately pour the glaze over the warm cake, allowing it to seep into the cake and set as it cools.
