Recipe: Hearty Chicken Stew

Ingredients:

  • 2 tablespoons olive oil
  • 1 pound chicken thighs, boneless and skinless, cut into pieces
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 3 carrots, peeled and sliced
  • 3 celery stalks, sliced
  • 4 cups chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 2 bay leaves
  • 1 cup potatoes, peeled and cubed
  • Salt and pepper to taste
  • 1/2 cup frozen peas
  • 2 tablespoons cornstarch mixed with 2 tablespoons water

Directions:

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chicken pieces to the pot and cook until they are nicely browned on all sides, then remove them and set aside.
  3. In the same pot, add the chopped onion and minced garlic. Cook until the onion is translucent and the garlic is fragrant.
  4. Add the sliced carrots and celery to the pot, and sauté for a few minutes until they start to soften.
  5. Return the browned chicken to the pot along with the chicken broth, dried thyme, dried rosemary, bay leaves, and cubed potatoes. Season with salt and pepper according to your taste.
  6. Bring the mixture to a boil, then reduce the heat to a simmer. Cover and let simmer for about 30 minutes, or until the vegetables are tender and the chicken is thoroughly cooked.
  7. Stir in the frozen peas and the cornstarch-water mixture to thicken the stew. Continue to cook for an additional 5 minutes, or until the stew has reached your desired consistency.
  8. Remove the bay leaves from the stew before serving.

Serve this Chicken Stew hot, perhaps with a side of crusty bread or over a bed of rice to soak up the delicious broth. It’s a complete meal that offers comfort and flavor in every spoonful, making it a sure favorite for both weeknights and relaxed weekends. Enjoy the wholesome goodness with family and friends!
