Recipe: Boilermaker Tailgate Chili

Ingredients:

  • 2 pounds ground beef
  • 1 pound Italian sausage, casing removed
  • 2 (15 oz) cans chili beans, drained
  • 1 (15 oz) can chili beans in spicy sauce
  • 2 (28 oz) cans diced tomatoes with juice
  • 1 (6 oz) can tomato paste
  • 1 large yellow onion, chopped
  • 3 stalks celery, chopped
  • 1 green bell pepper, seeded and chopped
  • 1 red bell pepper, seeded and chopped
  • 2 green chili peppers, chopped
  • 4 cubes beef bouillon
  • 1/4 cup chili powder
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon minced garlic
  • 1 tablespoon dried oregano
  • 2 teaspoons ground cumin
  • 2 teaspoons hot pepper sauce (e.g., Tabasco)
  • 1 teaspoon dried basil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon cayenne pepper
  • 1 teaspoon paprika
  • 1 teaspoon white sugar
  • 1 (10.5 oz) bag corn chips (such as Fritos®)
  • 1 (8 oz) package shredded cheddar cheese

Directions:

  1. Heat a large stockpot over medium-high heat. Crumble the ground beef and Italian sausage into the pot, cooking until evenly browned. Drain any excess grease.
  2. Add the drained chili beans, chili beans in spicy sauce, diced tomatoes with juice, and tomato paste to the pot. Stir to combine.
  3. Add the chopped onion, celery, green and red bell peppers, and chopped green chili peppers to the pot. Stir in the beef bouillon cubes, allowing them to dissolve in the mixture.
  4. Season the chili with chili powder, Worcestershire sauce, minced garlic, oregano, cumin, hot pepper sauce, basil, salt, black pepper, cayenne pepper, paprika, and sugar. Stir everything well to blend the flavors.
  5. Cover the pot and reduce the heat to low. Simmer the chili for at least 2 hours, stirring occasionally. The longer it simmers, the better the flavors will develop.
  6. After 2 hours, taste the chili and adjust the seasonings as needed, adding more salt, pepper, or chili powder to your preference.
  7. Serve the chili hot, topped with corn chips and shredded cheddar cheese.
